Ingredients

  • 1 large egg
  • 1 cup of sugar
  • 1 cup of peanut butter
  • Extra Ingredients if you want

Instructions

  • Preheat your oven to 350
  • In a large mixing bowl combine your egg, sugar, and peanut butter and mix well. (I like to put them in that order because then you only need to dirty one measuring cup.)
  • After it is well mixed you can add any extras you want (we did mini chocolate chips because my son loves to add chocolate to just about everything, and it's something we had in our pantry)
  • Once your extras are mixed in, then roll the dough into small balls and set directly on your cookie sheet. Because there is already oil in your peanut butter there is no need to oil the sheet.
  • Smash down into a cookie shape lightly with a fork so they cook through (and look cute)
  • Bake at 350 for 8-15 minutes (The time will depend on how big you make your cookies, how accurate your oven is, and what kind of pan you use. I like the thicker jelly roll pans, so I always have to add a few minutes to any recipe I make)
  • When the cookie is done it will be even across the top and will not have any sunk-in or wet look to the middle of it. No need to wait until they get brown around the edges, I think they are too dry once that happens.
  • You can let the cookies cool completely on the pan, or just cool enough to move them to a cooling rack and then do so if you want to re-use the same cookie sheet.
  • After the cookies have completely cooled, move to an air tight container.
