Easy Crockpot Salsa Chicken
With the looming holidays and school in full swing I really need some simple weeknight recipes to get food on the table. We’re saving up for those holiday expenses and the drive-thru just cuts away at the budget. This crockpot salsa chicken couldn’t be easier.
I love a crockpot recipe that you can throw ingredients in and walk away. No sautéing or browning anything first. In this case, just place the chicken in the crockpot and dump your favorite salsa on top. It’s effortless.
The chicken was still frozen. No need to defrost. It went straight from the freezer to the crockpot. After a couple hours on high the chicken falls apart as you shred it right in the crockpot.
This easy crockpot salsa chicken is so versatile too. Sometimes we make it with red salsa, sometimes with green. You could even do a mango or pineapple salsa. Ohhhh yum! Now my mind is working. See, you can really get creative.
How to Make Salsa Chicken in the Crockpot
Making salsa chicken could not be easier. Just place 1 pound (about 2-3) boneless chicken breast in the bottom of the crockpot. No need to defrost if using frozen chicken breast.
Then pour the salsa (red or green) over the chicken. Place the lid on the crockpot and then cook on high for 2-3 hours or on low for 5-6. Shred the salsa chicken in the crockpot with two forks and you’re all set. Read on for tips on how to eat your salsa chicken.
Red Salsa Crockpot Chicken
We love the red salsa chicken over rice. 20 minutes before dinner I put some rice in the rice cooker and let it do the job. I seriously love my rice cooker!
When everything is ready I dish the rice into a bowl and scoop the chicken and salsa over the rice. It’s so good!!!! 3 ingredients for the whole meal. That’s it!
Green Salsa Slow Cooker Chicken
When I use salsa verde to make salsa chicken, I mix in cooked pasta and cheese. In our house we refer to it as Mexican Mac & Cheese. Top with your favorite extras like jalapeños, cilantro, sour cream or creama.
Radiatore is my favorite pasta to use (pictured below). All the salsa gets caught in the ripples of the pasta so you get tons of flavor in every bite. It’s absolutely delicious!
Salsa Chicken Leftovers
Leftovers are a must when making this dish. I always cook more than we’ll eat for dinner. You can make so many mouthwatering meals with this.
Throw salsa chicken in a quesadilla for lunch, use it on nachos, have a taco salad, make taquitos, tostadas, or burritos. The list goes on.
You can also change the recipe up a bit by adding a cup of cream cheese or a can of cream of chicken soup in the crockpot with the salsa and chicken.

With the extra red salsa chicken, I made these unbelievably delicious grilled sandwiches for lunch the next day. Just add avocado and jack cheese to the chicken and grill.
While the left over green salsa chicken was used to make a quick salad.
