White Chocolate Thin Mints – Easy Christmas Cookie

Easy Christmas Cookies

Every year I know December is coming but every year it sneaks up on me. I think I am buying presents and planning Christmas activities on a timely matter but then all of the sudden it is December 20th and I’m not done shopping and forgot I had a party to go to and was supposed to bring something.

Is it just me or does that happen to you too?? This recipe is perfect for last minute planners like myself.

You only need 3 ingredients to make these Christmas cookies but you can always add more to make them cuter.

I hate when I see a recipe that say 5 ingredient casserole but there is really 8 because they don’t count a few of the things as ingredients.

One time I looked up 5 minute dinners while I was in the pick up line to get my kiddo from school. We had a busy evening and I didn’t have much time to cook. I found a recipe and decided yes, that should work.

I got home and got the ingredients out and started reading and after you put everything together you had to simmer everything for 15 to 20 minutes! Um ma’am that is NOT a 5 minute meal.

So we had Chick-fila that night.

Long story short I can’t say this is a 2 ingredient cookie because you might need more and I don’t want to leave you shaking your fist at me if you need more then 2 things to make this.

With all that said, this really is a super easy and super delicious recipe. Plus not a single person I know doesn’t love thin mint cookies.

When you tell them you brought homemade thin mints with white chocolate, I am sure everyone will be excited to try them.

How To Make White Chocolate Thin Mint Cookies

For this recipe you only need a few things. The first thing you need is vanilla cookies. I am using Nilla Wafers.

Second, you need some white chocolate melts. If you can find mint flavored white chocolate melts, even better because you will only need those two ingredients.

If you are like me, my grocery story only had white vanilla ones so that is what I got. If you got the plain vanilla or plain white chocolate, you will need some mint flavoring.

To make these cookies just like thin mints you want mint. If you want to make them more christmasy, you can use peppermint flavoring or extract.

Remember that the difference between extract and flavoring is that extract is WAY stronger which means you only need a drop or two.

I decided I want to try both and see which we like better.

All you need to do is melt your chocolate in a bowl according to directions. Stir in the mint. Then dip the wafer cookie entirely in the melted chocolate and place on parchment paper to dry.

It really is that simple. If you want to fancy them up a bit you can add red and green sprinkles or crushed up candy canes pieces. Both will look great and add to the whole Christmas theme.

What You Need

  • Vanilla Wafer Cookies of choice
  • White chocolate candy melts OR White chocolate mint candy melts
  • Mint or peppermint extract/flavoring (If your chocolate ins’t mint flavored)
  • parchment paper
  • Sprinkles or crushed up candy cane (optional)

Tips for Making These Easy Christmas Cookies

Things I learned while making these

  • You do not want to over heat your chocolate or it gets chunky and thick.
  • Once the chocolate is melted, if it is still too thick you can add a tiny bit of shortening to thin it out.
  • A little bit of flavoring goes a long way! Start small and add more if needed.
  • If you stick these in the fridge once completed, the chocolate sets super quickly and you can enjoy eating these even sooner than leaving them on the counter.
  • I put them on parchment paper to set and they peeled off of it very easily.
  • These are a great recipe to have kids help make. They will have fun dipping the cookies and sprinkling them with the garnish of your choice.
